New Summer Program in Mediterranean Culinary Arts (MCA) - LdM Florence and CETT Barcelona

Starting from Summer 2019, a new program in Culinary Arts will be offered jointly by LdM and CETT (Universitat de Barcelona), focusing on the culinary tradition of the Mediterranean region.

ABOUT the MCA Summer Program

The Mediterranean Culinary Arts Program (MCA) is structured in two courses; the first, Culinary Techniques and Processes, is held at CETT Barcelona, while the second one, Pairing Food and Wine, is taught at LdM Florence.

After having gained an overview of the food industry in the Mediterranean countries, students will approach both practically and theoretically main cooking and presentation techniques, acquiring traditional methods as well as the latest innovations in the field.

Understanding food as a cultural expression and a multifaceted form of creative activity in which scientific rigor meets creativity and inspiration, the program addresses the nutritional aspect of culinary arts, paying particular attention to different dietary requirements.

With considerable emphasis on practice and experiential learning, this cross-cultural summer program is perfect for international students pursuing a degree in culinary arts and nutritional studies and even for those whose primary interest lies in the fields of the liberal arts and social sciences.


DURATION OF THE PROGRAM: 6 weeks (3 in Barcelona, 3 in Florence)
